Pulled Pork and Sriracha Guacamole Grilled Cheese

I wish I could just say this was sooooo good and then stop.  But I won’t.

This was actually my most favorite dinner of the week so far.  Ok, it’s Monday, I get it but this was awesome.  And it really took no time because my pulled pork was leftover from a recipe I made last week.  I had a small amount left so I made this pulled pork and sriracha guacamole grilled cheese.  If you want to check out the amazing pulled pork recipe I made in the Instant Pot, go here!

Find below how I made this awesome grilled cheese sandwich.  If you have a fear of HEAT then you can make this to your heat level love.

Pulled Pork and Sriracha Guacamole Grilled Cheese Recipe

Servings: 4 servings

Ingredients

Pulled Pork

  • 2 cups pulled pork (recipe linked above)
  • 1 small white onion, chopped
  • 2 TBS EVOO (or oil of your choice)
Sriracha Guacamole
  • 1 large avocado
  • 1 TBS lime juice
  • 1 tsp minced garlic
  • 1 jalapeno pepper, seeded and thinly diced
  • 1/2 tsp cumin
  • 1 tsp sriracha sauce (less if you don’t like as much heat)
Sandwich
  • 8 slices french bread (or bread of choice)
  • butter
  • 8 slices muenster cheese (or cheese of choice)

Instructions

  1. Begin by making guacamole. Mash together avocado, lime juice, minced garlic, jalapeno, cumin and sriracha. Set aside and allow for flavors to combine.
  2. In the mean time, in a small skillet add EVOO to skillet and add chopped onions to skillet. Saute for 2-3 minutes. When they start to become translucent add in shredded pork. Stir together and saute for an additional 2-3 minutes.
  3. Butter unsalted bread and place butter side down. Place one piece of cheese on side of one piece of bread (unbuttered side). Top with sriracha guacamole, then top with pulled pork and top with another piece of cheese. Top with another piece of buttered bread.
  4. Place in skillet and cook for 2 minutes (or until the bread is golden brown on medium-low temperature. Flip and allow the other side to get golden brown. You may cover with a lid to ensure the cheese melts completely.
