It’s time for another Instant Pot meal. This time around it’s another mac & cheese meal but the flavor of this is out of this world good. My little 2 year old love mac & cheese in the Instant Pot, as I know I do. When she hears that’s what’s for dinner, she gets excited and within seconds, all you hear is her dragging her little chair out to help. Help accepted!
Begin by adding butter and sweet Italian sausage to the inner pot. Saute the sausage for about 5 minutes. Press cancel when finished.
When the sausage is browned, add the macaroni noodles, water, cayenne pepper and stir to combine. Close the lid, seal the valve and press manual and adjust the time to 6 minutes.
When the timer goes off, quickly release the pressure and open. Add in cream cheese, cheddar cheese (or mac & cheese blend) and allow for the cheese to melt. Once melted, add the pimentos and cooked broccoli and serve.

- 3 TBS unsalted butter
- 1 lb Sweet Italian Sausage
- 2 cups elbow macaroni or pasta of choice
- 2-3 shakes of cayenne pepper (more or less for spicy flavor)
- 3 cups water
- 1/2 cup milk (or more as needed) I used 2%
- 3 oz cream cheese, cubed
- 2 cup mac & cheese blend shredded cheese (or cheddar)
- 1 4 oz jar pimentos, drained
- 1 cup broccoli, chopped
- salt and pepper to taste

Press saute on the Instant Pot and allow the pot to read HOT. Once hot, add in butter and allow to melt. Once melted, add in ground sausage and brown until finished; about 5 minutes. When meat is browned push cancel.

To the pot, add in macaroni noodles, water and cayenne pepper and stir to combine. Place lid on Instant Pot and press manual feature and adjust time to 6 minutes.

When done, allow for a quick release of the pressure. When pin drops, open lid carefully and press cancel.

Press saute feature again and add in cubed cream cheese and stir. When starting to melt, add in shredded cheese and stir until melted.

When cheese is melted, add in pimentos and cooked broccoli and stir to combine.

Add salt and pepper to taste.
