I have been craving avocados in EVERYTHING so I made one of my favorite quesadillas for dinner. This chicken avocado quesadilla is amazing and with only a few ingredients, you’ll have this ready to go for your dinner in no time.
I wanted to make sure the shell stuck to the ingredients so I added some cheese to the top and bottom of mixture. If you have a quesadilla maker you can use that. If not, use a skillet. Both work as well as the other.
The quesadillas were extremely creamy and delicious. I can’t wait for you to try them out. Enjoy!

Chicken Avocado Quesadillas

Ingredients
- 2 cups cooked chicken breast, chopped or shredded
- 1/2 cup cheddar cheese (or cheese of choice), shredded
- 1 avocado, diced
- 1/4 cup sour cream
- 1/4 cup fresh cilantro, chopped
- 4 large burrito shells

Instructions

In a bowl, mix together the chicken, avocado, sour cream and cilantro.

Place a burrito shell into a pan under medium heat. Add a sprinkle of cheese to one side of the shell and top with half of the chicken mixture. Add a sprinkle of cheese to top of mixture and top with burrito shell.

On medium heat, cook 2 minutes on the first side or until the shell become a nice brown color. Flip and cook for an additional 2 minutes.

Remove from pan and cut into wedges. Serve with salsa, sour cream or eat as is.

Quesadillas are best served warm.
