Um…Yum! We started off the middle of the week by making baby back ribs in the Instant Pot. I KNEW I wanted my husband to make his special rib sandwich we call the ‘McRoj’. Yes, his name is Roger and this sandwich is amazingly yummy and so much better than that one you get that the huge chain restaurant. I had made ribs on the smoker about 2 years ago when I had my girl and we almost let them go to waste. This is when the McRoj came to be. It’s seriously da bomb!
I need three homemade items in this sandwich to make it supreme and they are:
Instant Pot Ribs
Quick Picked Onions
Homemade BBQ Sauce
That’s no problem if you don’t have the homemade BBQ sauce. Just use your favorite store brand. I promise this will STILL come out amazing.
I have found the best way to cut up the ribs are to remove the bones from the back. Trust me, if you made these in the Instant Pot they will come out SO easily. Then you’ll cut the ribs in half as in you’re having a half-slab of ribs. But then for each sandwich you’ll cut lengthwise so there is one whole piece.
Once you have add the ingredients above ready, it’s time to assemble your sandwich. Grab a pack of Hoagie Rolls and cut in half. You’ll need to toast either on a flat iron skillet or a non-stick skillet until both sides are a light brown color. When done remove from the pan.
Place a piece of rib on the bottom of the bun and on top of the ribs, add some quick pickled onions. Add 3-4 dill pickles (it needs dill) next and then top with some BBQ sauce and add the top bun. That’s it.
